J.Bones Barbecue is looking for a dedicated and skilled Pitmaster / Prep-Cook to join our crew. This is an overnight position , responsible for running the smoker, smoking meats to perfection, and setting the kitchen up for the next days service. If you take pride in your craft, know your way around a smoker, and love working with a team that values quality, this role is for you. Responsibilities
- Operate and maintain smokers, grills, and related cooking equipment during overnight shifts.
- Trim, season, and prepare meats for smoking and service.
- Monitor pit temperatures and cook times to ensure consistent, high-quality results.
- Slice and portion meats for service with precision and care.
- Assist with preparing side dishes, sauces, and other menu items as needed.
- Maintain a clean and organized pit/kitchen area, including equipment cleaning.
- Follow all food safety, handling, and sanitation standards.
- Work as part of the team to ensure the kitchen is ready for the next days service.
- You must be self motivated and good with time
- Experience with barbecue, grilling, or meat smoking strongly preferred.
- Knowledge of meat cuts, trimming, and seasoning.
- Ability to work overnight shifts (including weekends and holidays).
- Physically able to lift 50 lbs and stand for extended periods.
- Strong work ethic, reliability, and a passion for great barbecue.
- Previous line cook or kitchen experience is a plus.
- ServSafe Manager certificate a bonus
