Dietary Director
Reports To: Administrator
Position Summary:
We are seeking an experienced and talented Food Service Director to join our team at Ariel Bay Rehabilitation and Healthcare, a long-term care facility dedicated to providing exceptional care and services to our residents. As a key member of our leadership team, the Dietary Director will be responsible for planning, organizing, directing, and supervising all dietary department functions, ensuring that residents receive nutritious and appetizing meals that meet their individual needs.
Essential Duties and Responsibilities:
Department Management:
Plan, organize, develop, and direct the overall operation of the Dietary Department.
Ensure compliance with all federal, state, local, and facility regulations regarding food service operations.
Develop and maintain departmental policies and procedures.
Participate in facility management meetings and quality assurance activities.
Resident Nutrition and Dietary Services:
Coordinate meal services to ensure residents receive nutritionally adequate and appealing meals.
Ensure therapeutic diets are prepared and served according to physician orders and dietitian recommendations.
Review resident food preferences and accommodate dietary needs whenever possible.
Monitor food quality, portion control, and meal presentation.
Address resident and family concerns regarding dietary services.
Staff Supervision:
Train, supervise, and evaluate dietary department staff.
Prepare staffing schedules and maintain adequate departmental coverage.
Conduct performance evaluations and disciplinary actions as necessary.
Ensure staff maintain food safety and sanitation standards.
Food Safety and Sanitation:
Ensure compliance with food handling, storage, sanitation, and infection control procedures.
Conduct routine inspections of kitchen and dining areas.
Maintain compliance with health department standards and survey requirements.
Ensure proper cleaning and maintenance of kitchen equipment.
Qualifications:
Education:
High school diploma or equivalent required.
Associate’s or Bachelor's degree in Food Service Management, Dietary Management, Nutrition, Hospitality Management, or related field preferred.
Experience:
Minimum of two (2) years of supervisory experience in food service management.
Long-term care, skilled nursing, rehabilitation, or healthcare food service experience preferred.
Certification:
Certified Dietary Manager (CDM) preferred or required in accordance with state regulations.
ServSafe Food Protection Manager Certification preferred.
Knowledge of state and federal long-term care regulations.
Knowledge, Skills, and Abilities:
Strong leadership and team management skills.
Knowledge of therapeutic diets and nutritional requirements for geriatric populations.
Knowledge of food safety and sanitation regulations.
Excellent organizational and communication skills.
Ability to manage budgets and control costs.
Ability to work effectively with residents, families, staff, and healthcare professionals.
Physical Requirements:
Ability to stand, walk, bend, and lift up to 50 pounds. Ability to work in kitchen environments with exposure to varying temperatures. Ability to respond to emergencies and departmental needs as required.
