Chef Masaharu Morimotoculinary icon and Iron Chefis proud to introduce MM by Morimoto, a new high-end Japanese dining experience opening soon in the heart of Montclair, New Jersey. We are seeking a Sushi Cooks & an Omakase Cook to work in our sushi program with precision, artistry, and innovation that honors Japanese tradition while embracing contemporary creativity.
This is a unique opportunity to join the opening team of a prestigious new concept that will set the standard for elevated Japanese cuisine in the region.
About the Role
As the Sushi Cook at MM by Morimoto, you will be responsible for maintenance of the sushi program. This includes maintaining food safety standards, and delivering an exceptional guest experience in line with Chef Morimotos exacting standards.
You will collaborate closely with the culinary and management teams to ensure consistent excellence in quality, execution, and presentation.
Key Responsibilities
- The ideal candidates will demonstrate a passion for sushi making and a commitment to quality and presentation in every dish they create
- As a member of the Sushi Team at Morimoto, you will be responsible for preparing a variety of sushi dishes, ensuring that each plate meets our high standards of quality and presentation
- You will work closely with other kitchen staff to maintain a smooth workflow and ensure that all dishes are prepared in a timely manner
- This role requires not only culinary skills but also the ability to work efficiently in a fast-paced environment, managing multiple dishes simultaneously while maintaining attention to detail
- Prepare a variety of sushi dishes including Nigiri, Sashimi, and rolls
- Ensure all dishes meet the high standards of quality and presentation
- Work collaboratively with kitchen staff to maintain a smooth workflow
- Manage multiple dishes in a fast-paced environment
- Maintain cleanliness and organization of the sushi station
What Were Looking For
- Minimum of 2 years of experience as a sushi chef or cook
- Knowledge of Japanese culinary traditions alongside classic cooking methods
- Exceptional Knife skills
- Mastery of sushi preparation techniques including maki, nigiri, and sashimi
- A deep understanding of Japanese ingredients, seasonality, and tradition
- The ability to thrive under pressure in a high-volume, fine-dining environment
- Commitment to maintaining the highest food safety and hygiene standards
- Excellent time management and organizational skills
- Up-to-date ServSafe certification (or equivalent as required by law)
Compensation Starting at $25 per hour, based on experience, plus potential performance-based incentives and benefits.
